Discussed above, and will be even better when it's iPad-native
BBC iPlayer - Free
You'll need wifi for this one, although the radio player might work with a 3G connection - subject to data usage limits. If you're travelling a lot this is great, as it allows not only access to all the last seven days of BBC TV, but also the LIVE TV for most BBC channels. You'll need a TV licence at home, but that covers your iPad usage wherever you are in the UK.

Box.net - Free app
If you store your crucial files on either of these services, the apps are perfect. You can view most files, as well as emailing and even editing some with extra, paid-for apps.
Google Maps (Pre-installed) and Google Earth - Free
Zooming around the world or finding the location of an obscure place are both easier than ever
GoTasks - Free
If you're a "to-do list person", especially if you use Google Tasks already, this is a great little application.
Calengoo - £3.99
The built-in calendar syncs with a Google or Microsoft Exchange account, via your mail connection. However, for advanced users, Calengoo is great if you have a busy schedule. It also runs on an iPhone, and keeps all your devices synchronised. It uses your Google calendars, but you can have multiple calendars shown at the same time, allows colour-coding of appointments and many other features.
iBooks (Built-in and free) and Amazon's Kindle App - Free
The display on the iPad isn't quite as comfortable to read as a dedicated ebook reader, but you can sync all your books using Amazon's free app. Turning down the display brightness reduces eyestrain, so for occasional readers, it's one less device to carry!
Flipboard - Free
If you use Facebook, Twitter or even just like reading various news sites, this app is a revelation! You select which content you wish to have loaded, and the app does the rest. It takes the data from various sources and renders it in magazine-article format. It's like having a glossy magazine written and edited just for you. (Even the editor was impressed!)
Apple claim to have over 100,000 apps in their store now, meaning there's literally too many to write about. But there is an app for almost everything, including diverse requirements such as:
Simple VAT - Calculating VAT to add or subtract to a product
WunderMap or AccuWeather - Getting accurate weather forecasts
NavFree - Satellite Navigation - for free - it's not perfect, but it is free
RightMove - Checking house prices and full details of properties around you
BigOven and Epicurious - More recipes than you'll ever need in your life!
